About you...hello farah,
thanks for visiting my blog. About your question, I can give you some tips which I hope will help you.
a) The stuffing needs to be preferably dry for making
parathas as this mainly helps I. The rolling process.
b)Instead of adding tamarind pulp, which can make the stuffing more soggy, you may add Amchur powder (mango powder) which will serve the same purpose.
c)To make round parathas, everybody has their own method :) , I will tell you my method: The dough ball should be bigger than the stuffing ball. Flatten the dough ball using your hands in such a way that you flatten only the edges so as to form a depression in the center ( this depression will help the stuffing to sit in the center of the dough while you try to cover it with the fattened edges of the dough. The dough should just be flattened enough to form a small round to cover the stuffing. Now place the stuffing in the center and stretch the flattened edges of the dough to cover the stuffing. Gather all the edges towards the top and seal them together, you may use a pinch of water too. Now hold the dough in your hand and using the tips of your fingers of both hands slowly flatten the dough and this time flatten the dough evenly, this helps to spread the stuffing before you roll the parathas. Use the rolling pin to slowly flatten the paratha further.
I hope this helps.Anonymoushttps://www.blogger.com/profile/10574736515170211403noreply@blogger.comtag:blogger.com,1999:blog-28462389.post-50729591897197157792009-04-02T14:18:00.000-04:002009-04-02T14:18:00.000-04:00hi there!2day i made aloo+carrot paratha. wt i did...hi there!
2day i made aloo+carrot paratha. wt i did was, i saute some onions and boiled aloo+carrot in some oil and then added some masala's; i even added littlebit of leftover tamrind pulp or juice. the mix was soft(not dry like if u boil the veggies n staright use as stufing). i faced lot of difficulty while rolling my parathas; the stuffing eas oozing out from the edges+ stuffing not spreading evenly + parathas were not round...can u advise????thx in advancce.Anonymousnoreply@blogger.com
