Note:
Its always best to have butter and eggs at room temperature. It makes a significant change while we try to mix the batter as well as to the texture of the cake.
Ingredients:
1 cup butter (softened)
2 cups sugar
4 eggs
1 teaspoon vanilla
3 cups flour divided
1/2 teaspoon salt
1 teaspoon baking powder
1 cup rum soaked candied fruits
Method:
Preheat oven to 325 degree F
Cream butter and sugar until light and fluffy
Separate egg yolks and whites and add the egg yolks one at a time to the butter-sugar mixture and beat until light and fluffy. (Do not beat the egg whites yet) Add vanilla essence and mix well to incorporate.
Sift 2 cups flour, salt, and powder together. Add these dry ingredients to the wet ingredients in small batches and incorporate it well. You might start noticing that the batter becomes thicker and thicker. But don't worry as it will not affect the texture of the cake. So do not add any liquids even if you are tempted to do so. It might be a little to mix the batter, but don't give up :)
