RM2-Day8- Rose Cake

This is my post for RM2-Day 8. V had gifted me with a rose shaped bundt pan and we were so excited to see the outcome of the cake when it was baked in it. It looked perfectly like a rose :) Hence I decided to name it as Rose Cake :) I can't wait to surprise him with this bundt pan on Valentine's day :) and you folks can surely expect a special recipe I would bake that day:) . Anyways I followed a simple cake recipe for this cake. It was not the recipe , but the cake's shape which we were more excited about. But when the cake was done, did we realize that not only did the cake pan do a good job about the shape of the cake, it did an even amazing job about cooking the cake evenly. I loved the texture of the cake and so for the next batch I added some rum soaked fruit peels (some call it tutty - fruity). So here is the recipe:

Its always best to have butter and eggs at room temperature. It makes a significant change while we try to mix the batter as well as to the texture of the cake.

Ingredients:

1 cup butter (softened)
2 cups sugar
4 eggs
1 teaspoon vanilla
3 cups flour divided
1/2 teaspoon salt
1 teaspoon baking powder
1 cup rum soaked candied fruits

Method:

Preheat oven to 325 degree F

Cream butter and sugar until light and fluffy

Separate egg yolks and whites and add the egg yolks one at a time to the butter-sugar mixture and beat until light and fluffy. (Do not beat the egg whites yet) Add vanilla essence and mix well to incorporate.

Sift 2 cups flour, salt, and powder together. Add these dry ingredients to the wet ingredients in small batches and incorporate it well. You might start noticing that the batter becomes thicker and thicker. But don't worry as it will not affect the texture of the cake. So do not add any liquids even if you are tempted to do so. It might be a little to mix the batter, but don't give up :)

Add the fruit peels to the remaining flour and just give it a light shake to coat the fruit peels. Then gently fold them to the cake batter. Grease and dust the cake pan with oil and flour and pour batter into it. Spread it evenly. Bake for 1 hour and 15 minutes or until knife comes out clean.
