RM2-Day 12- Pancake-Besan (Chickpea flour) dosa

This is my post for RM2-Day12. I was experimenting in my kitchen to make variety of instant dosas. I had never made dosas with Besan mainly because I didn't like the texture. So I decided to mix some pancake mix along with some Besan flour and added some garnish to make these dosas. They came out very nice. And like most of the dosas, they are best served hot. You may refer my RM2-Day 11 for the garnish ingredients. The only difference here is I am using Besan (Chickpea flour) instead of Wheat flour. I used 50:50 ratio of Besan flour and Pancake mix (I used the Buttermilk Pancake mix, but you may use any Pancake mix ). Added enough water to form a lump free batter. Tip: For a less messy batter, add the flours in a blender along with enough water for the blender to run properly. Do not add too much water though, just enough for the blender to cooperate. Run the blender in short breaks, to form a nice smooth semi thick batter. Tranfer it to a different vessel, and then see if the batter is free flowing (the batter should flow smoothly, instead of falling like a lump) using a laddle. If the batter is not free flowing, keep adding water little by little, until the batter is free flowing. This is the correct consistency of the batter to make dosas.
